Indirect firing: Modern technology for constant temperature of pizza ovens
The indirect variant like Valoriani Indirect is a slightly newer approach. The pizza ovens have two separate chambers that lie on top of each other. In the lower chamber, a fire is lit, heating the walls and floor of the upper chamber. The baking process takes place in the upper chamber. Due to the upward urgent heat, the pizzas can be placed on the hot ground and baked there. The indirect heating is particularly suitable for dishes whose cooking time is slightly higher, such as large pieces of meat or some types of bread.
Fine roasted flavor in pizza ovens with direct firing
Direct firing, on the other hand, is considered the classic and traditional way of baking a pizza in the oven. This technique has already been used in the oldest clay furnaces. At direct firing, the wood fire and pizzas are in a common baking chamber. After it's fueled, you place the fire in the back of the chamber and put the food down in front of it. Both the direct waste heat from the fire and the indirect heat over walls and floor contribute to the baking or cooking process. A special feature of a directly fired pizza oven is the fine crust of the dishes in combination with the fine roasted aroma, which is created by the interaction of direct and indirect heat.
The wood-fired oven: Croat taste in Italian style
Originally, all the pizzas were baked in a stone or wood oven, giving them a unique flavour. This smoky element cannot be achieved in gas ovens and is often referred to as the real Italian flair. Wood ovens are usually placed in the garden and heated with wooden shafts some time before baking. After a certain amount of time, the occupied pizza floors can then be pushed into the oven, which are finished baked within a few minutes. The workload at such a pizza oven is worthwhile for all pizza lovers, as the smoke gives the wood burning of the pizza a very special flavour and at the same time allows especially crisp pizza bases.
The pizza stone: The most important flavour enhancer in pizza ovens
Pizza baked on a grate or even baking tray doesn't compare to the crispy, crispy bottom of a stone-baked pizza. Therefore, with a pizza the hint "baked on stone " is always considered a special quality feature. So a good pizza oven contains a chamotte stone floor on which the pizza is baked. There are some differences in pizza. A particularly thick stone takes longer to heat, but also keeps the heat better and gives off its heat evenly, which is ideal for baking. A thin pizza stone can be heated faster, but gives off the heat faster. The stones come in different sizes and strengths, although the material also differs. All chamotte stones in our ovens are food-safe and easy to clean.
Gas ovens: Practical and easy-to-use pizza ovens
In addition to the wooden pizza ovens, you will find gas ovens in various versions in our shop. Pizza baking ovens with gas have clear advantages over the models, which are either heated fuelled with wood.Fuelling with wood is difficult to do, especially in enclosed spaces, and the oven must be properly connected to a chimney. It also needs to be swept regularly. Wood stoves are also more complex than their gas-powered competition models in maintenance and maintenance as well as in the daily cleaning routine.
