Wood Firing:
Traditionally, pizza ovens and dome ovens are fired with wood. In Italy, the clocks tick differently when it comes to preparing and cooking food. Food, its preparation, and sociability are highly valued. If you are one of those who like to take your time and enjoy a leisurely pace, wood firing is optimal for you.
First, the fire is lit, then tended, and the crackling and scent spread. After about 40 minutes, the oven reaches temperature, and cooking can begin. After the meal, the fire goes out, but the embers still provide warmth and coziness, allowing the evening to wind down. If you're making pizza, your oven reaches around 400 degrees, so after the meal, in a second round, when you've cleared the embers, you can bake bread. The next morning, you bake a yeast plait for breakfast with the residual heat.
Wood firing is the most traditional way to operate a pizza oven. It requires a bit of finesse to find the right amount of wood for the desired temperature or the right time to add individual logs. But with some experience, it becomes quite easy.
Gas Firing:
Faster, modern, and effective is also firing with gas. High-quality burners are installed at the factory in Fontana and Valoriani pizza ovens, offering full power and, depending on the model, electronic control. With the push of a button, the flame is there, the oven heats up, possibly following a preset program, in optimal time, reaching a high temperature of about 400 degrees after half an hour. The prepared dishes are slid in and cooked just like in a wood oven. Cooking with a gas burner also requires a bit of practice. The flame is quicker at the start, shortening the heating time. However, after the meal, the oven is off.
