Valoriani Rotativo: professional for the catering trade
Besides quality, efficiency is one of the most important keywords in the catering and hotel industry. In times of a shortage of skilled workers, the factors of time and cost savings are becoming increasingly important. This is where the Valoriani Rotativo comes into play.
It is a highly professional pizza oven with combined gas and wood firing for perfect heat distribution. The Rotativo keeps the temperature constant for hours. The unique fireclay plates and insulation ensure constant heat, which can be regulated in the temperature range 200 to 500 degrees. The fireclay base rotates and moves the food automatically in the oven. This allows the cook to turn to other work, because the oven moves the food evenly in the oven. This saves time and ensures the perfect degree of cooking.
Another enormous advantage of the Rotativo is its energy efficiency. Valoriani has installed its patented Recycling Heat System (RHS) in the Rotativo, which circulates the heated air inside the oven several times, just like in a convection oven, so that the warm air is kept in the oven for a long time and energy is saved in the form of gas and wood. The exhaust air is also cleaner and odourless thanks to this technology, because most soot particles burn off at the high temperature of up to 500 degrees. This makes the Rotativo with its rotating base plate particularly interesting for inner-city locations.
