Baking the original Pizza Napoletana is an art. As a UNESCO World Heritage, the Pizza Napoletana is a cultural asset worth protecting. This protection is dedicated to the Associazione Verace Pizza Napoletana (AVPN).
The professional pizza course by the AVPN is aimed at chefs and restaurateurs who want to learn how to prepare the original Pizza Napoletana. Over 5 days in 40 teaching hours (6 hours of theory, 34 hours of practice and test) with a maximum of 5 participants, the theoretical lessons cover the details of the ingredients water, flour, yeast, and salt, the dough method, and the other ingredients. It also covers the different types of ovens and their specifics.
In practice, participants cook on AVPN-certified pizza ovens from the companies Izzo and Valoriani with wood, gas, and electric heating. The trained Pizzaiolo of the AVPN impart the knowledge in a relaxed, collaborative atmosphere. At the end of the course, there is a practical and a theoretical exam. The standards of the AVPN are extremely high and very strict. This guarantees the internationally high status of the certificates.
The course is held in Italian or English. A German translation is available upon request and with a binding booking. AVPN workwear and all materials are included in the price.

In Italy, the land of pizza, the AVPN has a home advantage. 2000 Pizzaioli are certified and appeal to the top ten percent of pizza lovers. AVPN chefs cook in top gastronomy. In Germany, 5 restaurants are currently certified, where reservations are necessary. They are well-known among connoisseurs. These include:
- Malafemmena in Berlin (the only one cooking in an AVPN-certified gas oven)
- Il Forno in Hamburg
- Pergola in Kaufbeuren
- Pizzeria Bestia in Hildesheim
- Gold of Naples in Aachen
"Interest in AVPN courses among German top gastronomers is rising," says Jens Hofacker, owner of La Bottega Toscana. He offers the classic AVPN week course for restaurateurs several times a year. Also, further courses from the Scuola Italiana Pizzaioli and courses for private customers and bespoke courses on request for companies or private events are available.
