A wood-fired oven is a multi-talent. Reducing it to pizza underestimates its potential. Especially fine meat can be refined thanks to high temperatures. And that is where our chef excels. His simple yet wonderful recipe will surely delight you too:
Buy a very good piece of red meat of your choice.
Heat the oven to 450 degrees. Put a cast iron pan inside immediately so it gets really hot.
Add some oil to the pan, place your meat inside for 3 minutes on each side.
Then let the meat rest for 5 minutes.
Done!
A dream and very juicy!
Serve with salad and a piece of baguette.
