Firebricks are refractory stones, resembling rock. Chamotte is an artificially manufactured material made from raw clay and a certain percentage of alumina. The stones provide sustained temperature in the pizza oven as they can store heat for a long time. The higher the alumina content (typically up to 45%) in the chamotte base, the greater the heat retention. The melting point of firebricks is around 1700 degrees, hence they are referred to as refractory.
Chamotte is manufactured in multiple steps. The raw clay is initially fired and crushed several times, ground, and then mixed again with raw clay and fired again, creating a granulate that has a specific composition unique to Valoriani Forni. Through various pressing processes, the chamotte granulate is shaped. The dry-pressed stone is particularly stable and refractory.
