Welche Öfen eignen sich als Pizzaofen Napoli?

Es gibt zwei italienische Manufakturen, die sich als Hersteller neapolitanischer Pizzaöfen bezeichnen dürfen: Izzo Forni und Valoriani Forni. Beides sind Traditionshäuser, die sich seit  mehreren Generationen dem Pizzaofen verschrieben haben. Die hohen Temperaturen, die eine echte Pizza Napoli braucht, können grundsätzlich mit jeder Energiequelle erreicht werden, egal ob Holz, Gas oder Elektro. Es kommt wie oben beschrieben auf das Herz des Ofens, also die Isolation und den Stein im Garraum an. In Italien gibt es die AVPN (Associazione Verace Pizza Napoletana), die Organisation, die sich um die Tradition der Pizza Napoli kümmert.
