The wood and stone ovens of Valoriani and Fontana are of very good quality. The two companies are traditional Italian companies that have been building these dome ovens and baking houses for decades. Q: Which mobile wood stove is suitable for private celebrations with 20-30 people for pizza, tarte flambée and bread?
A: Ideal for mobile use is a wood oven by Fontana Forni with a depth of 80 cm. The oven is equipped with 3 baking levels and can be transported on a cart / trailer.
Q: After commissioning, the painting already bursts in the area of the fireplace
from - why?
A: The upper fine layer on the steel body is a pure protective layer, which is supposed to prevent flight rust from forming after the production due to residues of residual moisture in the materials. This layer dissolves completely after the first firing, is present in almost all Fontana furnaces and completely harmless.
Q: We have acquired a wood baking oven of the brand "Forno Italia". Is it possible to retrofit a thermometer in the door (upper frame) to better control the heat / heat in the oven?
A: It is not recommended to install a thermometer in the oven afterwards. The displayed temperature is usually always about 50 ° C lower than measured in the flue gases. In order to measure the temperature of the floor and dome 100%, a laser thermometer should be used, which works up to 450 ° C, because the inside temperature can be very high. These are already available from about 20 euros in the trade.
Valoriani for gastronomy
Q: Is the trailer available from Valoriani in Germany?
A: The Valoriani trailer does not have TÜV approval in Germany. The actual wood oven "Igloo" can be purchased from us. Most customers assemble these on an existing trailer to realize the project more cost-effectively. The Igloo is available as a trailer version with reinforced floor, dome, floor insulation. Optionally, you can also choose the slightly cheaper model "Hobby" as a semi-professional model.
Q: What color can the oven Igloo or Hobby be painted with?
A: The stove can be painted with commercial silicate paint or facade paint. To ensure breathability, no latex paint should be used. Optionally, the stove can be provided with tiles or mosaic, but then should remain open at the top of an open place for the escape of moisture / only with plaster.

Q: I have not received any cement to fix the parts of the dome together after insertion. Is a commercial cement sufficient or do I need a special product to fill the cracks between the elements of the oven?
A: The dome parts are only filled on the outside and a normal fireclay mortar can be used, the dome parts are only assembled dry and filled outside.
Q: I'm going to build a Siporex enclosure with a tiled roof around the furnace so the furnace will actually be built in a big cube. What is the diameter and height of the steel chimney pipe and do I have to insulate it?
A: The smoke tube should be at least 2-3 meters high to get a good draft. For the diameter the ideal dimension is 180-200mm, for lengths over 4m a pipe in 150mm should be sufficient, depending on the weather, wood and other factors.
A single-walled pipe is sufficient, double-walled pipes are only relevant for near flammable materials or roof penetrations.
Q: We have seen Valoriani kit ovens. Is it possible to purchase the oven with another oven door? For example with a "right" door with hinges?
A: First of all, we would like to say that the heat losses are very similar with good insulation and the door is only used when baking bread, ie after removing the embers. Otherwise, the stove always stands up and the door is hardly needed. Model "FVR" is only available with the flap and model "TOP" only with solid ceramic door. It is not possible to swap them because they are two different models and it does not fit in the scale of measurement. The model "Indirect" is only available in one copy.
Q: How is the firing and commissioning of the "Valoriani Indirect" or "Valoriani Cuppola"?
A: The special thing about this model is that you can start baking directly. However, the first 2-3 baking activities should be fired slowly to ensure that any residual moisture can escape and that no cracks develop on the oven. We recommend to use only 2-3 logs and to max. Preheat 150 ° -200 ° C. The baking time for the pizza is then about 10 minutes.
After that it is ideal, the oven min. 1 to 1.5 hours to approx. 280 ° - 300 ° C (according to thermometer). If you want to bake directly on the chamotte, the embers should be pushed back to the last third after firing, so that the ground temperature is not too hot. If you bake on trays, this is not necessary because they take away from the temperature. Every 15-20 minutes, 1 to 2 small pieces of wood should be added so that the oven is at approx. 250 °C.
After inserting the pizza, the baking chamber should be closed again, so that no high heat loss takes place. Ideal are thin pizzas and not so much toppings, then you have directly on the ground a baking time of about 3-5 min.
If you want to bake bread in the second round, please remove the embers completely and leave the oven open for 10 minutes to allow some heat to escape. Then insert bread and close the oven for about 30-40 minutes.
Q: What connection does the "Valoriani Baby Gas" model have on the stove?
A: The following connection is on the stove to use a normal pressure reducer:
• ½ inch female thread x ¼ inch male thread (left)
• To connect a ½ inch male thread to a commercially available propane hose (¼ inch union nut), e.g. Outdoor gas cooker, camp stove etc.

Q: Our pizza oven "Valoriani Baby" has been outdoors for about 3 years. At various points, the paint bursts, and it creates a slight rust coating. Can I attach new paint and if so which ones?
A: Yes, you can delete the spots. First, please sand the place a bit and then coat with heat-resistant oven paint (paint or spray). The paint is available at the hardware store.
Q: Our pizza oven "Valoriani Baby" is outdoors and has not been in operation for 1 year. We cheered him for 3 hours, but more than 150 ° C were not reached. Can it be that he is moist inside?
A: It can be assumed that the firebrick stones have drawn moisture if the stove has not been in operation for a long time and it has also frequently rained. In this case we recommend to heat the stove at least 2 more times for at least 3 hours in order to achieve the drying of the firebrick stones. Then everything should work as usual.
Q: Which substructure should be used under a wood stove?
A: It is important that the floor is given a certain amount of insulation to lose the heat as slowly as possible, so that no tensions are created and as much heat as possible is used for baking. We recommend a 10 cm thick calcium silicate or refractory aerated concrete layer as substrate. These can be glued with tile adhesive on a concrete slab or placed floating in a border.
Q: Between the bottom plate stones and the two-part vault cup all around are about 1-2 cm free space. How should this be filled?
A: The radius of the floor is always about 2 cm smaller than the outside dimensions of the dome, so that the floor (if necessary) can be changed and the stones have a possibility to expand. The fireclay has a higher expansion than the dome parts and should not press against the dome. Normally, this gap remains open and settles over time with ashes, etc. Visually, it can be grouted in the front area or optionally filled with sand.
Q: Is the insulating layer completely plastered with the fireclay mortar? The supplied quantity seems a bit too small for me.
A: After the ceramic fiber, a metal mesh / hare wire or similar is applied in dome optics and plastered with lime-cement plaster. The fireclay mortar (10 kg) is used only for filling the joints outside, the smoke connection or the leveling of the floor slabs and is thus sufficient.
Q: Do I have to wait for the usual 28 days drying time until the first firing or is it earlier?
A: When the stove is insulated, it can start operating slowly and should be slowly fired for 2-3 days using only 2-3 scabbards of wood to allow the moisture to escape. After the fire has gone out, close the oven with the flap. After that, the oven is ready for use!
Q: They also offer pre-assembled ovens. Will they then be delivered and installed directly? How far must the substructure have progressed? What are the costs?
A: The FVR series is available in a diameter of 80/100/120 cm, also as an already assembled version with a round dome shape. They are delivered free house to curb. A transfer to the installation site is
on-site. Please make sure that the outer dimension of the ovens is about 40cm larger than the inner dimension. The ovens because of between 500 and 700 kg.
The Hobby series has a substructure under the floor insulation and it is sufficient if it sits right/left and rear it is therefore to some extent self-supporting, optionally there is
metallic under-cosntruction as an accessory.
Q: Isolation is very important to me. Is it possible to isolate twice or does it make no sense?
A: If you only want to plaster the oven, we recommend 2 rolls of ceramic fiber (approx. 3/4 layers) for a size from 120 cm in diameter. If it is walled, a roll of ceramic fibre plus the
vermiculite, which provides a very high second isolation.
Q: The ceramic fibre was outdoors and became damp at a corner/place. Is this a problem for further processing?
A: No, let the ceramic fiber dry and then you can process it accordingly.
Q: With which material should Valoriani kits GR be plastered with ceramic fiber after insulation?
A: Use a lime-cement plaster and apply it 4-5 cm thick. Thus, cracking can be used. Due to the ceramic fibre, the furnace is already excellently insulated.
Oven operation with gas
Q: The gas burner under the stove is getting too hot. Why is that?
A: The gas burner is controlled based on the standard gas parameter. Further regulation might be needed to achieve an efficient and proper flame. An efficient and correct maximum flame can be recognized by the fact that it has a length of about 15 cm. An efficient and correct minimum flame is recognizable by being half the length of the maximum flame. Too little regulation of the minimum flame could lead to an anomaly heating the torch body. This phenomenon causes a noticeable noise (muffled gargling). If this happens, it is necessary to immediately turn the torch knot into the position of the gas lock (OFF) and to properly regulate the minimum flame of the burner.
Q: Which wood is best for firing wood ovens?
A: We recommend dry beech or birch wood for optimal firing. Conifers are not suitable, there is a risk of sparks due to the essential oils in these woods.
Q: Can I convert a wood oven to gas?
A: Yes, that's no problem with the furnaces made by Valoriani. An appropriate gas burner is needed and the oven requires a hole that depends on the burner selected. Gas burners are available in our shop.
Q: When putting in the pizza, the pizza often sticks to the slider. Is there a trick here, so that the pizza can be better "injected"?
A: To make it easier to get in and out of pizza, we recommend using flour. Cause could also be that the sauce is too long on the dough, then this can push through and the pizza sticks to the slide firmly. Taking these two aspects into consideration, it should work.
Q: How can I clean, care for and protect the fireclay floor?
A: Abrasion phenomena of the fireclay floor are very surprising after a short period of time and not normal. There are some important things to take care of the oven, so please adhere to it:
• Never use moisture, water, cleaning agents or damp cloths for cleaning. This can cause a thermal shock. Then the material contracts too fast and cracks can occur!
• It is sufficient to remove the ash and debris with a brass broom.
• Change the fire weekly to equalize the firebrick floor.
• Close the door after work or in the evening to reduce the heat or temperature in the oven very slowly.
• Under the floor, a min. 20 cm thick insulation to store the heat and ensure slow cooling.
Q: I would like to insert an ash drawer with a slot. Where does the slot have to be placed? Does such a thing make any sense at all?
A: You can install an ash drawstring at the front between the front panel and the floor panels. However, it is not absolutely necessary, as the wood-fired ovens are usually so efficient with good insulation that even after 4 to 6 hrs of firing max. a handful of ash is produced. The easiest way is to turn off the oven when it is put into operation, as it is usually cooled down.
Q: Is there an interior lighting or how can you realize something like this?
A: Unfortunately, this is not possible. When the oven is fired, it is light due to the flame in the interior. Additional lighting is therefore not required. Some customers have installed a flexible lamp on the furnace mouth, which is possible without testing.
